Beatriz Arellanes

Professional and Education:
Beatriz is the Coordinator of Latino School Enrollment, Archdiocese of Omaha. Her service focuses on informing and promoting Catholic education and accompanying Hispanic families through the school enrollment process. She has a teaching background including as a high school health and life science professor in Irapuato, Mexico, and as a college associate professor teaching planning and strategies applied to organizations at the University of Celaya, Mexico. Beatriz serves as a consultant with the National Catholic Education Association (NCEA), where she also authors content for their magazine, Momentum. She received the NCEA’s Catherine T. McNamee Presidential Award in 2017 for promoting a vision of culturally and economically diverse Catholic schools serving students with diverse needs. Prior to her faith-based work, Beatriz has an extensive international level background in the food industry serving in production and supply chain management roles for several firms, as well as consulting and teaching over a 22-year period. She has a Bachelor of Science degree in Chemical Engineering.

Community Service & Philanthropy:
Since 2015, Beatriz has facilitated Catholic education access to hundreds of Latino children, from preschool to High School. She developed a network with local organizations and agencies, like Catholic Charities, the Consulate of Mexico, the Nebraska Hispanic Chamber of Commerce, other Archdiocese Latino Ministries, that are instrumental in serving the Latino community in the Archdiocese of Omaha. She supported the Archdiocese of Omaha efforts to open El Centro Pastoral Tepeyac and providing resources to improve the services El Centro offers to the Latino community. During the COVID-19 pandemic, her efforts in keep contact with Latino families and connecting them with catholic schools and other organizations to bring relief and hope Beatriz has been able to get additional resources and services to the Latino Community during these difficult times.

Faith & Ministry:
St. Thomas More Parishioners since 2009, the family got involved in the school and parish life as part of the School Board, Eucharistic Adoration crew, Respect Life, and Renovation Capital Campaign. Beatriz has served as an EMHC in her Parish for more than nine years. She and her husband, David, are members of the Archbishop’s Committee for Development.

Family & Personal:
Beatriz has been married for 27 years to David Delgado. David is a professional chemical engineer working for the food industry for 33 years. In 2009 he was transferred from Mexico to Omaha; currently, David is the President of Gilman Cheese Corporation. Beatriz and David have two children. Their daughter, Danis, is a Mercy High School and University of Nebraska alumnae, and is now working with CASA for Douglas County, advocating for children in foster care. Their son, Irving, is a St. Thomas More and Creighton Prep alumnus and a recent graduate from The University of Notre Dame pursuing a career in Medicine.
